Hyssop (Hyssopus officinalis) is an old herb, although the hyssop mentioned in the Bible as one used for cleansing buildings was probably marjoram. It is used in various cultures now - it is one of the flavors in chartreuse, and the French use it to flavour tomato preserves. It was often used by the medical profession.

A perennial evergreen, Hyssop has dark green leaves and flowers pink, blue, and white. It does well in a container, and likes lots of sun and well rained soil.

Hyssop is very strong, with a minty taste and smell. Hyssop is good as a tea, or as a flavoring for salads and soups. It can also be used in strongly flavoured meat, sausages, and fruit recipes. For domestic uses, put some dried leaves in a satchel for repelling moths and fleas.
