Scampi Provencale with Thyme Recipe

A microwave version, this cooks quickly and tastes scrumptious! Ingredients
2 Tbsp olive oil
1 onion, finely chopped
1 clove garlic, crushed
14oz canned plum tomatoes, chopped (keep the juice)
5 Tbsp dry white wine
1/4 tsp fresh thyme, chopped
1 tsp fresh basil, chopped
1 bay leaf
1 Tbsp fresh parsley, chopped
salt and freshly ground black pepper
1 Tbsp cornflour
1 1/2 lb prawns, shelled

Combine the olive oil, onion and garlic in a deep bowl. Cook on high for 5 minutes, stirring frequently. Add in the chopped tomatoes, wine, herbs, salt and pepper, then stir well. Head for 2 minutes on high. Mix in the tomato juice with the cornflour and add to the sauce. Cook on high for 3 minutes, then stir well.

Add the prawns and cook on high for 2-4 minutes, or until they are tender and the sauce is thickened. Remove the bay leaf and serve on a bed of rice or pasta.
