Scampi Provencale with Thyme Recipe
A microwave version, this cooks quickly and tastes scrumptious!
Ingredients Combine the olive oil, onion and garlic in a deep bowl. Cook on high for 5 minutes, stirring frequently. Add in the chopped tomatoes, wine, herbs, salt and pepper, then stir well. Head for 2 minutes on high. Mix in the tomato juice with the cornflour and add to the sauce. Cook on high for 3 minutes, then stir well. Add the prawns and cook on high for 2-4 minutes, or until they are tender and the sauce is thickened. Remove the bay leaf and serve on a bed of rice or pasta.
