Thyme Vinegar RecipeThis thyme vinegar recipe can be used for marinades, salads and sauces.
Ingredients Crush the thyme leaves with a mortar and pestle. Bring the vinegar just below a boil but do not allow it to boil. Pour the vinegar over the crushed leaves. Put the mixture into a wide-necked bottle and seal it shut. Stand it in the dark for 2-3 weeks. Strain the liquid into a new, clean bottle and add the sprig of thyme. Stopper the bottle with a cork.
