The Waller - Warren Family Cookbook
Spritz Christmas Cookies

Spritz cookies were made by putting dough into a metal hand-held cookie press that would squish out cool cookie shapes, sort of like a play-dough machine. These were favorites of Lisa and Jenn Waller when they were growing up.

Ingredients:
1 cup butter, softened
1 cup white sugar
1 egg
1 1/2 teaspoons almond extract
1 pinch salt
1 1/4 cups all-purpose flour

Combine butter or margarine, sugar, egg, almond extract, and salt. Cream together well. Add 1 1/4 cup sifted flour. Mix thoroughly. Place dough in cookie press, and make cool shapes. Place on cookie sheet that has been lightly sprayed with oil.

Bake at 350 degrees F (175 degrees C) . Check at eight minutes. It will take at least ten minutes to cook. Bake until slightly brown. If baked on an air bake cookie sheet, cooking will take a few minutes longer. Sprinkle with colored sugar crystals.
