Irish Rhubarb Cake RecipeThe Irish were well known for creating hearty meals out of simple vegetables. Their rhubarb cake is a fine example of this skill. 2 1/2 c flour 2 c rhubarb 1 1/2 c sugar 1/2 c butter 1 egg 1 c milk 1 tsp salt 1 tsp baking soda 1 tsp vanilla Topping: 1/2 c sugar 1 tsp cinnamon Sift the flour. Cut up the rhubarb into small pieces then mix rhubarb with 1/2 cup flour. Now mix sugar and butter, blend in egg. Mix salt, baking soda, milk and vanilla together and blend into rhubarb and remaining flour. Grease a 9x13 pan, flour it. Pour batter into the pan. Nox mix the sugar and cinnamon.
