Fried Calamari

12 ounces fresh calamari
3/4 cup olive oil
2 tablespoons parsley
1 clove garlic
2 teaspoon marjoram
salt and pepper
rice flour

First, you need to prepare the calamari. First remove the innards, then remove the quill and peel away the skin. Now cut the head off and remove the mouth. Wash the tentacles and body. Cut the body into ring shapes, about 1/4" wide. The tentacles are fine as is.

For the marinade, add in the olive oil, parsley, garlic, marjoram, salt and pepper. Mix, then add in the calamari. Let soak for an hour in the fridge.

Now heat oil until dropping in a bit of oil causes it to bubble. It should be around 2" deep. Shake off the marinade and roll the rings in the flour until coated. Now cook the rings until they turn golden brown. Remove the rings with a slotted spoon, and then lay on paper towels.
